Tuna Sandwich serves 4.
1 can (7 ounces) tuna in olive oil, drained and flaked
1/2 cup finely chopped onion
1 rib celery, finely chopped
dash of Worcestershire sauce
1/4 c. finely chopped sweet pickle (relish)
1 teaspoon of Dijon mustard
1 tablespoon fresh lemon juice
3 – 4 tbsps mayonnaise
1 small cucumber, optional
8 slices bread toast (preferably rye or wheat)
salt and pepper, to taste
1. Mix tuna with mayonnaise, mustard, pickle relish, celery, Worcestershire sauce, onion, lemon juice, adding a little
more mayonnaise if not moist enough.
2. Peel and thinly slice cucumber. Spread tuna mixture on toast or bread slice, top with thinly sliced cucumber, lettuce and tomatoes.
