How to make Clubhouse Sandwich:
Clubhouse Sandwich — best known simply as the “Club” — stacks three tiers of toasted white bread with classic chicken salad, crisp bacon, crunchy lettuce, and juicy tomato.
Diced roast turkey or chopped fresh-cooked shrimp can be easily swapped for the chicken in this variation.

Clubhouse Sandwich Cooking Time 10 minutes
1 chicken breast fillet
1 tablespoon olive oil
juice of half a lemon
salt and pepper to season
1 egg, beaten
2 slices white bread
1 slice Canadian bacon
1 leaf iceberg lettuce
3/4 tablespoon mayonnaise
1 slice wheat bread
1/4 avocado, julienned
1/4 mango, julienned
1/2 tablespoon Dijon or Pommery mustard
salad tomato, sliced thinly into circles
1 Marinate chicken in lemon juice and olive oil for at least 1 hour.
2 Season egg with salt and fry on a non-stick pan until done and set aside.
3 Fry the Canadian bacon until crisp then set aside.
4 Season marinated chicken with salt and pepper and grill until done. Let rest for 5 minutes before slicing thinly on a bias.
5 To assemble, layer everything in this order: a slice of white bread; layer of mayonnaise; lettuce; grilled chicken; avocado; slice of wheat bread; mustard; egg; bacon; mangoes; tomatoes; and finally the last slice of white bread. Secure the 4 sides with cocktail toothpicks and slice the sandwich into two diagonally.
