Leche Flan Cake

leche flan cakeHow to make Leche Flan Cake:

Here’s a two-in-one treat you will love rich cake topped with leche flan, a Pinoy classic dessert.

Good for 1 rectangular cake or 12 small cakes Preparation Time is 25 minutes Baking Time is 45 to 50 minutes.

 

For the leche flan:

1 1/2 cups sugar
6 whole eggs
1 can evaportated milk
1 can condensed milk
1/2 cup sugar
1/4 teaspoon grated lime (dayap) rind
or 3 drops lemon extract
1 teaspoon vanilla

For the chiffon cake:

1 3/4 cups cake flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup sugar
1/2 cup soya oil
6 eggs, separated
3/4 cup milk
1 teaspoon grated lime (dayap) rind
2 drops lemon extract
1/2 teaspoon cream of tartar
1/2 cup sugar

 

1. In a 13 x 9 x 2-inch rectangular pan or a 12-hole muffin pan, caramelize 1 1/2 cups sugar. Set aside.

2. In a bowl, combine eggs, evaporated and condensed milk, sugar, rind, and vanilla. Mix until well blended but do not over beat.

3. Strain over the pan with the caramelized sugar.

4. For the chiffon cake: In a bowl, combine flour, baking powder, salt and sugar. Blend well. Add in oil, egg yolks, milk, rind, and extract. Whisk until smooth. Set aside.

5. In a mixer bowl, combine egg whites and cream of tartar. Whip until soft peaks form. Gradually add sugar and continue beating until stiff but not dry. Fold into the egg yolk mixture.

6. Pour cake batter over the leche flan mixture in the pan.

7. Place the baking pan on a tray half-filled with water.

8. Bake in a preheated 325 degree F oven for about 45 to 50 minutes or until cake is done.

9. Remove from the oven. Pass a spatula or knife along the edges to loosen the cake. Invert on a serving platter. Cool before slicing.

TIP: We know that leche flan and cake are rich enough on their own and putting them together can be quite decadent, but you know what’s even better and richer? Serving it chilled with a large scoop of vanilla ice cream on the side in order to have a delicious leche flan cake.
